Diabetic follow a low glycemic index diet. The menu must include 5-6 small meals, which should be eaten at regular times.
It does not recommend, for example, eating sweet breakfasts. The last meal should be eaten just before bedtime to prevent nighttime hyperglycemia and hunger.
The digestion of food must take longer so that glucose is released into the blood more slowly.
This is facilitated, among others, by combining carbohydrates with fats in the diet. A diabetic should minimize the consumption of foods containing simple sugars, especially sweets, honey, and some raw fruits.
At the same time, it is important to consume a large amount of fiber, which can be found mainly in cereal products, vegetables, and fruits.
It is advisable to eat cereal products and potatoes but only cooked the previous day, because resistant starch is produced in them, thanks to which these products are better tolerated by diabetics.
Diabetic Diet – What Can You Eat?
Fruits contain fructose, a simple sugar, so they are generally not recommended for diabetics.
Fortunately, some of them have a low glycemic index, so they do not have to be completely excluded from the diet. Fruits suitable for diabetes include blackcurrants, avocados, and apples.
On the other hand, kiwi and grapes have an average glycemic index, and bananas, watermelons, and all dried fruits provide the most fructose.
It is worth avoiding ripe or overripe fruits, which contain more sugar. Fruits are also rich in fiber, an important ingredient in a diabetic diet, and vegetables have even more of it.
They have a low glycemic index, e.g. tomatoes, peppers, onions, and garlic. A good drink for diabetics, in addition to water, is vegetable juice. When it comes to bread and pasta, it is best to choose whole grains.
We have prepared a sample menu for a diabetic, in which we serve alternative dishes with each meal, including foods suitable for vegetarians.
- Breakfast: 2 sandwiches with egg and cucumber or steamed scrambled eggs, 2 slices of bread and cucumber or cottage cheese with cucumber and tomato, and 2 slices of bread
- II Breakfast: natural yogurt with flakes and linseed or a portion of feta cheese salad, cherry tomatoes, and spinach
- Lunch: chicken breast with buckwheat and red cabbage salad or red bean chops with buckwheat and sauerkraut and carrot salad
- Snack: 2 rice cakes or a handful of mixed nuts
- Dinner: ham and tomato sandwich or graham roll with cottage cheese with tuna and onion or with lentil paste
The last meal before bedtime: yeast dough with a glass of milk/kefir or a rusk. In addition, a minimum of 2 liters of fluids should be consumed daily.

Recipes For Diabetics
> Diabetic pancakes
– 1 cup of wheat flour,
– 1 glass of milk,
– 2 eggs,
– pinch of salt,
– water (as needed)
– oil or olive oil for frying.
A method of preparing
All ingredients should be mixed using a mixer. Then, after waiting for about half an hour, fry on both sides in a hot pan in fat.
The best pancakes for diabetics will be those for which we will use whole wheat flour and add crushed oatmeal to the dough. When it comes to the filling, basil pesto or buckwheat groats with white cheese and onion will be a good solution.
> Diabetic Soup
– 3 potatoes,
– 1 carrot,
– half a head of cauliflower
– 2 tablespoons of cream 18%,
– salt and pepper.
A method of preparing:
Wash the vegetables. Then peel the potatoes and carrots and cut them into cubes, cut the cauliflower into florets and put them into the boiling water. When the vegetables are soft, add the cream, salt, pepper, and chopped parsley.
It is worth not cutting vegetables finely to slow down the digestive process. Cream soups are not suitable for diabetics.
